Zucchini Lemon Pancakes

Sneak in your servings of veggies at the start of your day with these zucchini lemon pancakes! Zucchini has a mild flavor and can be paired with ingredients to take on sweet or savory flavors. Start off with these pancakes and fuel your body with folate, fiber, vitamins and more.

Ingredients

  • 1 medium zucchini
  • 1 cup Kodiak cakes protein pancake mix
  • 1 egg
  • Juice from 1/2 of a fresh lemon
  • 1/4 cup blueberries
  • 3/4 cup water
  • 2 tablespoons of butter
  • 1 teaspoon of vanilla

Optional additions/toppings:

  • Maple syrup
  • Honey
  • Blueberries
  • Lemon/lemon zest
  • Powdered sugar

instructions

  1. Use a grater to shred 1/2 cup of zucchini.
  2. Combine all ingredients, except butter, into a large bowl and fold in ingredients.

  3. Heat large skillet with butter on medium heat until melted.

  4. Add 1/3 cup of mix to skillet to make individual pancakes.
  5. Cook for 3-5 minutes until golden brown on each side. Air bubbles in the mix will indicate to you when to flip.

  6. Top with your favorite toppings and enjoy!
