Watermelon Feta Salad

The sweetness of the melon paired with savory flavors from feta and balsamic reduction will create a party in your mouth! Watermelon is a great addition to any meal because it is packed with water, potassium and Vitamin C.

Ingredients

  • 2 slices of watermelon

  • 1 cup of spinach
  • Balsamic reduction

  • 1/4 cup of feta or goat cheese

  • 3 or more Basil leaves

  • 1/2 cup Pistachios

  • Pinch salt

instructions

  1. Cut watermelon into desired pieces, chop pistachios and slice spinach.

  2. Top watermelon with spinach, cheese, pistachios, basil and salt.

  3. Drizzle balsamic reduction however you please, enjoy!
