Cabbage is a hardy vegetable that can bulk up just about any recipe and has a great amount of fiber and vitamin C. This vegetable lasts long and is known to easily take on flavors of seasonings when cooked!
1 cup cooked thick, rice noodles
2 cups thinly shredded cabbage
1 cup carrots, chopped
1 cup protein (steak, tofu, chicken, pork tenderloin, etc.)
Sauce:
2 tablespoons soy sauce or liquid aminos
1 teaspoon fried chilies in oil (optional)
2 cloves minced garlic
1/4 cup sliced green onions
2 tablespoons crunchy peanut butter
Optional additions:
In a large skillet add oil and turn to high heat for 1 minute or until hot.
Add in carrots and cook for 5-7 minutes.
Whisk together sauce ingredients in a bowl.
