Thai Noodles with Sauteed Cabbage

Cabbage is a hardy vegetable that can bulk up just about any recipe and has a great amount of fiber and vitamin C. This vegetable lasts long and is known to easily take on flavors of seasonings when cooked!

Ingredients

  • 1 cup cooked thick, rice noodles

  • 2 cups thinly shredded cabbage

  • 1 cup carrots, chopped

  • 2 tablespoons of oil
  • 1 cup protein (steak, tofu, chicken, pork tenderloin, etc.)

Sauce:

  • 2 tablespoons soy sauce or liquid aminos

  • 1 teaspoon fried chilies in oil (optional)

  • 1 teaspoon minced ginger
  • 2 cloves minced garlic

  • 1/4 cup sliced green onions

  • 2 tablespoons crunchy peanut butter

  • 1 tablespoon water

Optional additions:

  • Nasturtium
  • Lime slices
  • Thai chili peppers
  • Radish
  • Peanuts

instructions

  1. In a large skillet add oil and turn to high heat for 1 minute or until hot.

  2. Add in sliced cabbage, let sit for 1 – 2 minutes before stirring to create a sear.
  3. Add in carrots and cook for 5-7 minutes.

  4. Whisk together sauce ingredients in a bowl.

  5. Add protein and noodles to the skillet on low heat, pour sauce over mixture and stir in until coated evenly.
  6. Serve hot or cold with additional toppings and enjoy!
