Sweet, Fiesta Corn Dip

When you think of sweet, most people think of candy or fruit but being from Midwest Missouri, I think of seasonal sweet corn! This fresh vegetable can be eaten raw or added into dishes like this tasty corn dip. Corn also has many benefits by providing nutrients like fiber, vitamin C and more!

Ingredients

  • 5 ears of fresh sweet corn
  • 1 8oz block of cream cheese
  • 1/2 cup of Greek yogurt
  • 2 tablespoons of avocado oil
  • 2 tablespoons of cotija cheese
  • 4 slices of cooked bacon, chopped
  • 3 cloves roasted garlic, diced
  • 1 bunch of cilantro
  • 1 jalapeno
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon tajin seasoning
  • 1/2 teaspoon coarse salt

instructions

  1. Remove husk from corn and slice off kernels
  2. Heat cast iron on high with avocado oil until hot.
  3. Once hot, add the corn kernels and sauté for 1 minute.
  4. Turn down heat to medium and stir in cumin, chili powder, smoked paprika, tajin, salt, garlic & bacon (save some for topping). Cook for 1 to 2 minutes.
  5. Turn to low heat, add cream cheese and stir until smooth.
  6. Remove from heat, fold in Greek yogurt.
  7. Serve dip and top with cotija cheese, jalapeños, cilantro, bacon and tajin seasoning.
  8. Enjoy with chips, veggies, and more!
