Tomatoes are a summer favorite and pack a lot of flavors along with nutrients like folic acid and vitamin C and K. Once you try this dish, it may just become a staple in your household because it is simple and delicious.

Ingredients

  • 3 eggs

  • 1 red pepper

  • 3 larger tomatoes

  • 1/2 onion

  • 2 cloves garlic

  • 2 tablespoons olive oil

  • 1 bunch basil

  • 1/4 cup feta, goat cheese, or parmesan

  • Pinch salt, pepper, hot chili flakes

  • Toasted French loaf

instructions

  1. Heat oven to 350′.

  2. Dice onions, garlic, tomatoes and peppers.
  3. Heat a medium cast iron skillet with oil for 1 minute or until hot.

  4. Add onion, tomatoes, peppers, salt, pepper, chili flakes and garlic to the skillet and cook for 5-7 minutes, stirring occasionally.

  5. Once water content is minimized, push the mixture around so there are three circles in order to place the eggs.

  6. Place the eggs in their designated spots and the place the cast iron in the oven to cook for 3-5minutes or until white of the eggs are set.

  7. Pull the cast iron out of the oven and sprinkle with cheese and fresh basil.

  8. Serve hot with French loaf, dip in and enjoy!
