Ramps can be sautéed, grilled or turned into this beautiful, tasty pesto! They also have many health benefits and contain nutrients like vitamin C and selenium.
Ingredients
3-5 ramps (ramp whites and greens separated)
1 cup olive oil
1/2 cup of shredded parmesan
1/4 cup of salted cashews, halves or whole
instructions
Wash ramps well, removing any dirt from inside the greens
Trim the greens off of the ramps.
Add ramp greens to boiling water for 30 seconds, then remove and place into an ice bath.
Drain greens and gently squeeze any excess water out.
Put all ingredients into a food processor and blend until smooth.
Enjoy with burgers, veggies, eggs, pizza and more!
