Rainbow Radish Slaw

Radishes are colorful, crunchy & a great source of Vitamin C! Serve this slaw as a beautiful side or on top of tacos, sliders & more!

Ingredients

  • 2 cups shredded radishes
  • 1 cup shredded carrots

Dressing

  • 2 tablespoons white vinegar or try Elderberry Vinegar from @elderblossomview
  • 2 teaspoons dijon mustard
  • Juice from 1/2 a lemon
  • Pinch of salt

instructions

  1. Use a mandolin or box grader to shred radishes and carrots.
  2. In a small bowl, whisk together ingredients for the dressing.
  3. Combine radishes, carrots and dressing in a bowl and mix until evenly coated.
  4. Place the mixture in the fridge to marinate flavors for 10 minutes then serve.
  5. Eat as a delicious side or on top of tacos, sliders and more!
