In the South, pimento cheese spread is a picnic basket staple. Find fresh sweet pimento peppers in season at the market and try this spread on biscuits.
Roast the pimento peppers whole and remove skin and internal seeds and plant matter, then mince. Combine cream cheese and mayonnaise and beat well until smooth. Add onion, garlic, sugar, and pepper and mix well. Add cheddar cheese and mix well. Then gently fold in the minced pimento. Cover tightly and refrigerate for up to two weeks. Spread on Take ‘n Bake Biscuits.
