Peel and thinly slice apples. Heat pan to medium-high & add butter. Add apples to pan & saute with brown sugar & dark rum. Once the rum has soften the apples, pull from heat. Top each cookie with a scoop of ice cream and place warmed apples on top. Enjoy!
