Microgreen & Morel Toast

Microgreens may be small but they have major benefits! Taste can vary depending on the variety but most tend to be full of potassium, iron, magnesium and are easy to digest. Add them to your breakfast, burgers, smoothies and more to experience their power!

Ingredients

  • 1 loaf of fresh bread
  • 2 tablespoons of oil
  • 3-5 morel mushrooms
  • 2 tablespoons quark cheese
  • Sunflower shoots
  • Pinch salt/pepper

Optional additions/toppings:

  • Pansy flowers

instructions

  1. Place 1 tablespoon of oil in a small skillet on high heat.
  2. After oil is hot, add morels, salt, pepper and cook for 30 seconds on each side.
  3. Place mushrooms to the side and toast bread with remaining oil.
  4. Once toasted, spread goat cheese evenly and add the morels, shoots and additional toppings if you wish.
  5. Enjoy!
