Long Bean Rice with Beef Heart

Long beans are pencil thin green beans that taste great, are great for you and you don’t have to snap off as many ends like regular green beans! Eat raw or put in place of green beans for any recipe. Long beans are packed with vitamin A and fiber as well!

Ingredients

  • 4 long beans
  • 1 cup of cooked rice
  • 1 cup cubed, cooked beef heart
  • 2 cloves of garlic, minced
  • 1 bunch of green onions, diced
  • 1 tablespoon of lard or avocado oil

Sauce:

  • 3 tablespoons of soy sauce
  • 1 tablespoon chili oil with fermented soy beans
  • 1 teaspoon of sesame seeds
  • 1 teaspoon of honey

instructions

  1. Heat cast iron with with high heat, add lard or avocado oil until hot.
  2. Snap long beans into the pan and add garlic and onions. Cook for 1 minute, stirring occasionally.
  3. Whisk together sauce ingredients.
  4. Add beef heart and sauce to the pan, stir and cook for 30 seconds or until caramelized.
  5. Serve with 1/2 cup of rice and top with extra chives, sesame seeds and more sauce if desired.
  6. Enjoy!
