Local Greens and Quark Dip

This recipe uses either spinach or collard greens, both of which add nutrients like folate, iron, and Vitamins A, C, and K to your diet. Try this local greens and quark dip as a healthy snack or appetizer!

Ingredients

  • 3 cups greens (collards and/or spinach)
  • 1 cup quark cheese
  • 1 loaf sourdough bread
  • 2 cloves garlic, minced
  • 1 small tub pork fat
  • 2 tbsp oil
  • 1 tbsp fresh lemon juice
  • Pinch salt and pepper

instructions

Slice sourdough bread to desired thickness. Coat both sides of bread with a generous amount of pork fat and sprinkle with salt. Heat a cast iron or non-stick pan on medium heat and toast bread until golden brown. Set aside or cut up to be served with dip.

For the dip, chop your greens (destem first if using collards). Heat cast iron or non-stick pan on medium heat and add oil. When oil is hot, add greens and garlic. Reduce heat to low. Stir for one minute or until greens are reduced. Add in quark and lemon juice and mix until melted. Add a pinch of salt and pepper. Serve dip in a dish with toasted bread.
