Kale is a beautiful leafy green that has a longer growing season and brings great fiber and vitamins A, C and K to your plate. Raw kale can be tough for many’s palate but when you massage it with oil or add it into dishes like this one, you’ll be amazed that you just might like it!
1 cup cooked spaghetti noodles
3- 6 grilled scallops
1/4 cup feta cheese
Sauce:
1 ripe avocado
2 tablespoon oil
3 cloves of roasted garlic
1/3 cup Greek yogurt
1/2 fresh lemon, juiced
Pinch salt & pepper
2 tablespoons water
Optional additions/toppings:
Heat a skillet on high heat with oil for 1 minute or until hot.
In a food processor, add sauce ingredients and blend until smooth.
In a bowl combine cooked pasta, scallops, kale and sauce.
Serve hot and top with optional additions, then enjoy!
