Set a large, heavy skillet over medium-high heat until it is hot. Add oil and swirl to coat skillet. Add lamb mixture and cook, stirring frequently to break up, until browned. Pour off any fat. In a medium bowl, combine the tomatoes, balsamic vinegar, olive oil, salt and pepper. Set aside. In a food processor, blend all the herbed yogurt ingredients until it turns pale green. Scrape into a small bowl. Heat or fry the corn tortillas in a little olive oil. Spread the tortillas with the herbed yogurt and top with the tomatoes and lettuce.
