Grilled Fennel Risotto & Smoked Pork Tenderloin

Fennel is a beloved favorite by many! It has a light, sweet licorice flavor and is full of nutrients like potassium and Vitamin C. This delicious fennel risotto will have your friends and family asking for the recipe!

Ingredients

Risotto:

  • 1 large head of fennel
  • 1 cup cooked white rice
  • 1/2 cup peas
  • 2 egg yolks
  • 2 tablespoons butter
  • 2 tablespoons of oil
  • 2-4 pieces of cooked bacon, crumbled
  • 1/4 cup fresh, shaved Parmesan
  • Pinch salt/pepper

Pork:

  • Marinade pork tenderloin in Italian dressing or your favorite mix for 1hr or overnight.
  • Sear pork with high heat on the grill, then reduce heat and cook until internal temp is 145′.
  • Let rest for 5 minutes then serve.

instructions

  1. Start grill on high heat and let warm up for 5-10 minutes.
  2. Slice fennel bulb in half and coat with olive oil.
  3. Place on the grill for 1 minute each side.
  4. Remove from heat and slice fennel into bite size pieces.
  5. Melt butter in a medium sauce pan then add rice, peas, egg yolks, cheese, salt, pepper, fennel and bacon.
  6. Cook on low heat for 3-5 minutes, folding in ingredients.
  7. Serve with pork tenderloin and enjoy!
