Fennel is a beloved favorite by many! It has a light, sweet licorice flavor and is full of nutrients like potassium and Vitamin C. This delicious fennel risotto will have your friends and family asking for the recipe!
Ingredients
Risotto:
1 large head of fennel
1 cup cooked white rice
1/2 cup peas
2 egg yolks
2 tablespoons butter
2 tablespoons of oil
2-4 pieces of cooked bacon, crumbled
1/4 cup fresh, shaved Parmesan
Pinch salt/pepper
Pork:
Marinade pork tenderloin in Italian dressing or your favorite mix for 1hr or overnight.
Sear pork with high heat on the grill, then reduce heat and cook until internal temp is 145′.
Let rest for 5 minutes then serve.

Start grill on high heat and let warm up for 5-10 minutes.
Slice fennel bulb in half and coat with olive oil.
Place on the grill for 1 minute each side.
Remove from heat and slice fennel into bite size pieces.
Melt butter in a medium sauce pan then add rice, peas, egg yolks, cheese, salt, pepper, fennel and bacon.
Cook on low heat for 3-5 minutes, folding in ingredients.
