Garlic scapes are long green shoots that grow from the garlic bulb. They can be sautéed, grilled or turned into this beautiful, tasty pesto! They also have many health benefits and contain nutrients like vitamin C and selenium.
Ingredients
3-5 scapes
1 cup olive oil
1/2 cup of shredded parmesan
1/4 cup of salted cashews, halves or whole
instructions
Cut the bottom end and bulb off of the scape, use the middle for pesto.
Put all ingredients into a food processor and blend until smooth.
Enjoy with burgers, veggies, eggs, pizza and more!
