Fried Tomatillos

Remove the husk of a tomatillo and you’ll find a nice surprise to eat! Tomatillos are in the same family as tomatoes but they have a denser texture and a slightly tart, citrusy taste. They are great for salsas, frying and add nutrients like vitamin C & E to your dishes!

Ingredients

  • 6 tomatillos
  • 1 cup of flour
  • 2 eggs
  • 2 cups of bread crumbs
  • Pinch salt, pepper
  • 1-2 cups vegetable oil

Sauce

  • 1/4 cup Greek yogurt
  • 1/4 cup mayo
  • 1/2 lime, juiced
  • Pinch salt & chili powder

Optional additions:

  • Garlic chive flowers
  • Green onions
  • Cilantro
  • Parsley

instructions

  1. Prepare 3 plates and a large pan with oil for frying.
  2. On one plate, mix and hold the flour with salt and pepper, second plate- whisk eggs together and on the third plate – hold bread crumbs.
  3. Remove husk from the tomatillos and slice 1 inch thick.
  4. Drench slices with flour, then egg mixture, then bread crumbs. Making sure to cover all sides in all steps.
  5. Add slices to the pan carefully with the oil for frying.
  6. Fry for 30 seconds on each side and then remove to a plate with a paper towel to take excess oil off.
  7. Serve fried tomatillos hot with additional toppings if desired and sauce.
  8. Enjoy!
