Fresh Tomato Salsa

Ingredients

  • 8 Large Tomatoes – cut into small pieces
  • 2 Large Tomatoes – run through a food processor till liquid
  • 2 Large Onions – cut up small
  • 2 Large Green peppers – cut up small
  • 1.5 to 3 Tsp Cumin to taste
  • 1 to 2 Tbsp Salt or to taste
  • 1 to 2 Tsp Pepper to taste
  • 1 to 2 Large Bunch of cilantro – cut into medium size pieces
  • 6 Limes Juiced
  • 1/2 Cup apple cider vinegar
  • Hot Peppers – As much as you want to add for heat

instructions

  1. Combine all the tomatoes, onions, peppers and spices into a large pot. Add your cut cilantro. Take you limes and roll then on a hard surface and then cut them open and use a spoon to scoop out all the liquid into your salsa. Add your vinegar.
  2. Taste the salsa and see if you like it. If you want to add more cumin, salt or pepper go for it. I like extra cumin, vinegar and salt. I like mine with a bite. I also like to use about 3 Serrano’s and 2 jalapeno peppers per batch.
  3. Put it on a medium heat and let it come to a low rolling boil. Let it boil for 20 minutes. Then put in to your jars. Either put jars into the fridge when cool or put the hot jars into water bath for 30 minutes.
