Dill is a great herb and can be used for more than just pickles! Dill has many nutrients like vitamin A & C and when paired with ingredients like those in the dip below, it can really compliment one’s health. Try this dip with falafels or any other summer treat because it is light and full of flavor.
Falafel:
1 cup cooked chickpeas
1 cup of cook broccoli florets
3/4 cup of flour
2 cloves roasted garlic
1/4 teaspoon cumin
Pinch salt and pepper
Sauce:
1 cup plain greek yogurt
juice from half a lemon
1/4 cup dill diced
Pinch salt
In a food processor blend chickpeas, broccoli, garlic, olive oil, cumin, salt and pepper until smooth.
In a large bowl, stir in flour with the mixture from the food processor.
Let mixture chill for 1 hour (very important).
Once chilled, heat a pot with vegetable oil until hot for frying.
Roll chilled mixture into small, round balls.
Drop in the oil and cook for 2-3 minutes or until outside is golden brown.
Remove with a slotted spoon onto a paper towel to remove excess oil.
For the sauce, mix all ingredients together in a medium sized bowl.
Top the falafel balls with the sauce, extra dill and then serve and enjoy!
