Fiesta Fajita Peppers

Turn up the notch with these fiesta peppers! Peppers come in all different shapes, colors, textures, flavors and have great nutrients like vitamin A, vitamin C and potassium.

Ingredients

  • 2 bell peppers
  • 1 onion
  • 2 chicken breast filets
  • 3 tablespoons Italian dressing
  • 1 teaspoon tajin seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 2 tablespoons oil

Optional additions:

  • Avocados
  • Cilantro
  • Limes
  • Cotija cheese
  • Rice
  • Tortillas
  • Jalapeños

instructions

  1. De-seed peppers and slice into strips along with the onion.
  2. Cut chicken breast into even thickness strips.
  3. In a ziplock bag combine all ingredients except oil and let marinate overnight or for 1 hour.
  4. Heat a skillet on high heat for 1 minute with oil.
  5. Once hot skillet is hot, add peppers and protein and wait to stir for 1 minute to create a sear.
  6. Reduce heat to medium heat and cook until peppers are caramelized and protein reflects correct internal temperature.
  7. Remove from heat and serve with additional items to enjoy!
