Turn up the notch with these fiesta peppers! Peppers come in all different shapes, colors, textures, flavors and have great nutrients like vitamin A, vitamin C and potassium.
Ingredients
2 bell peppers
1 onion
2 chicken breast filets
3 tablespoons Italian dressing
1 teaspoon tajin seasoning
1/2 teaspoon smoked paprika
1/2 teaspoon cumin
2 tablespoons oil
Optional additions:
Avocados
Cilantro
Limes
Cotija cheese
Rice
Tortillas

De-seed peppers and slice into strips along with the onion.
Cut chicken breast into even thickness strips.
In a ziplock bag combine all ingredients except oil and let marinate overnight or for 1 hour.
Heat a skillet on high heat for 1 minute with oil.
Once hot skillet is hot, add peppers and protein and wait to stir for 1 minute to create a sear.
Reduce heat to medium heat and cook until peppers are caramelized and protein reflects correct internal temperature.
Remove from heat and serve with additional items to enjoy!
