Fall Arugula Salad

Getting your greens in is easy with arugula! Arugula is commonly a favorite green because it is delicate, yet takes up space with its’ peppery taste. Place on pizza, sandwiches or make a salad with this awesome ingredient while adding vitamin K and fiber to your diet!

Ingredients

  • 4 cups of arugula
  • 2 cups shredded chicken
  • 1 delicata squash
  • 2 tbsp avocado oil
  • 1/2 cup quark cheese or goat cheese
  • 1/2 cup dried cranberries
  • 1/2 cup *spiced nuts
  • Pinch of nutmeg, cinnamon and coarse salt

Dressing:

  • 3 tbsp of fresh orange juice
  • 3 tbsp of balsamic vinegar
  • 3 tbsp of maple syrup

Spice nuts

  • 1/2 cup raw pecans
  • 1/2 cup pepita seeds
  • 1 tsp maple syrup
  • Pinch coarse salt
  • Pinch cayenne pepper

instructions

Delicata:

  • Slice delicata into 1/2 inch strips, remove seeds and the ends
  • In a large bowl, add delicata, oil and nutmeg, cinnamon, salt and mix well.
  • Cook on a large pan sheet at 350′ for 15 minutes or until tender.

Dressing:

  • Mix all ingredients well.
  • Use as desired

Spiced nuts:

  • Heat oven to 350′
  • Combine nuts, maple syrup and cayenne in a bowl and mix well.
  • Place parchment paper on a sheet pan, add nut mixture and spread evenly to bake for 10 minutes or until nuts are toasted. Watch closely.
  • Add coarse sea salt on top, let cool.

Salad:

  • Add 2 cups of arugula
  • 1/2 cup cooked delicata squash
  • 1 cup of shredded chicken
  • 1/4 cup cheese
  • 1/4 cup dried cranberries
  • 1/4 cup spiced nuts
  • Top with dressing as desired
