Everything goes good with pizza, including eggplant! Eggplant provides a good amount of fiber with its spongy texture and nutrients like potassium. This veggie also easily takes on seasonings and flavors when roasted or grilled.
Ingredients
1 eggplant
1 cup of tomato sauce
1/2 cup of feta or goat cheese
1 cup shredded kale
3 garlic cloves, minced
3 tablespoons of oil
Fresh rosemary sprig
Pinch salt/pepper
Dough:
*1 packet instant yeast, instruction for dough included
Bread flour
Water
Oil
Salt

Preheat oven to 525′.
Make dough by using instructions on the back on yeast packet.
While dough is rising, slice eggplant thinly into chips.
Heat a large skillet with high heat and oil for 1 minute or until hot.
Add in eggplant chips, garlic, salt, pepper and cook for 1 minute each side. Then remove from heat.
Stretch out the dough and spread the tomato sauce.
Top with kale, cheese and eggplant.
Drizzle with oil and bake for 5-7 minutes or until desired.
