Collard Curry

Collards are big, tasty greens that are pack full of fiber and vitamin A & C. They can be used in many dishes to “bulk” food up and spread your dollar. Try them in this delicious, easy recipe!

Ingredients

  • 2 cups of collard greens
  • 3 cups of coconut milk
  • 2 cups of shredded chicken
  • 2 tablespoons of oil
  • 2 cloves garlic, diced
  • Pinch salt/pepper

Optional additional:

  • Roasted potatoes
  • Rice
  • Serrano peppers
  • Lemon zest

instructions

  1. De-stem collard greens and chop.

  2. In a skillet heat oil with medium heat for 1 minute or until hot.

  3. Add greens and garlic, cook for 2 minutes stirring occasionally.
  4. Reduce heat to low, add coconut milk, chicken, salt and pepper.
  5. Cook for 5-7 minutes or until hot.
  6. Pair with optional additions, serve and enjoy!
