Candied Roasted Carrots

Sweet and savory, these roasted carrots might just outshine the main dish! Carrots are a great vegetable that are out of sight and can improve sight with vitamins A and C.

Ingredients

  • 7 whole carrots
  • 2 tablespoons of oil
  • 2 teaspoons of brown sugar
  • 1 tablespoon of honey
  • 1/4 cup dried cranberries
  • 1/4 cup mixed nuts
  • 1/4 cup feta or goat cheese
  • 1 teaspoon salt

instructions

  1. Heat oven to 400′.
  2. Cut carrots longways and cover in oil and brown sugar.
  3. Prepare a baking sheet with tin foil and place carrots on top.
  4. Bake carrots for 5-7 minutes or until slightly tender.
  5. Remove carrots from the oven and set oven to 475′. Add honey, nuts, cheese, salt and cranberries on top of the carrots.
  6. Cook for 1-2 minutes or until caramelized.
  7. Remove carrots and enjoy hot!
