Sweet and savory, these roasted carrots might just outshine the main dish! Carrots are a great vegetable that are out of sight and can improve sight with vitamins A and C.
Ingredients
7 whole carrots
2 tablespoons of oil
2 teaspoons of brown sugar
1 tablespoon of honey
1/4 cup dried cranberries
1/4 cup mixed nuts
1/4 cup feta or goat cheese
1 teaspoon salt
instructions
Heat oven to 400′.
Cut carrots longways and cover in oil and brown sugar.
Prepare a baking sheet with tin foil and place carrots on top.
Bake carrots for 5-7 minutes or until slightly tender.
Remove carrots from the oven and set oven to 475′. Add honey, nuts, cheese, salt and cranberries on top of the carrots.
