Bok Choy Bowl

Bok choy can be used in many recipes to bulk up dishes with fiber and amazing textures! Some describe this veggie as a cross between celery and a spinach plant. Add bok choy to salads, noodles, stir fry and more for its many benefits!

Ingredients

  • 1 large bok choy or 2 medium bok choys
  • 1 cup cooked rice noodles
  • 1 cup of cooked protein (steak, tuna, chicken, tofu)
  • 1/2 cup shredded carrots
  • 1/2 cup chopped peanuts
  • 1 bunch of cilantro
  • 2 tablespoons of oil
  • 1 tablespoon of soy sauce or liquid aminos
  • 1 teaspoon sweet chili sauce
  • Pinch of sesame seeds

Sauce:

  • Soy sauce or liquid aminos
  • Sweet chili sauce

instructions

  1. In a small bowl, whisk together soy sauce, sweet chili sauce and 1 tablespoon of oil.
  2. Slice bok choy in half and brush with the blend of ingredients above.
  3. Place a large skillet on high heat with 1 tablespoon of oil for 1 minute or until hot.
  4. Add bok choy to the skillet and cook for 30 seconds on each side.
  5. Remove from the skillet and place the bok choy in a bowl with noodles, protein, carrots, peanuts, cilantro and cover with sauce ingredients or serve on the side.
  6. Top with sesame seeds and enjoy!
