Bok choy can be used in many recipes to bulk up dishes with fiber and amazing textures! Some describe this veggie as a cross between celery and a spinach plant. Add bok choy to salads, noodles, stir fry and more for its many benefits!
Ingredients
1 large bok choy or 2 medium bok choys
1 cup cooked rice noodles
1 cup of cooked protein (steak, tuna, chicken, tofu)
1/2 cup shredded carrots
1/2 cup chopped peanuts
1 bunch of cilantro
2 tablespoons of oil
1 tablespoon of soy sauce or liquid aminos
1 teaspoon sweet chili sauce
Pinch of sesame seeds
Sauce:
Soy sauce or liquid aminos
Sweet chili sauce
instructions
In a small bowl, whisk together soy sauce, sweet chili sauce and 1 tablespoon of oil.
Slice bok choy in half and brush with the blend of ingredients above.
Place a large skillet on high heat with 1 tablespoon of oil for 1 minute or until hot.
Add bok choy to the skillet and cook for 30 seconds on each side.
Remove from the skillet and place the bok choy in a bowl with noodles, protein, carrots, peanuts, cilantro and cover with sauce ingredients or serve on the side.
