Blueberry Pork Chops

Blueberries are so tasty, they are typically eaten raw and right away.  But blueberries can also brighten up savory dishes! Try this blueberry pork chop recipe to impress guests and sneak in some vitamin K that this wonderful fruit provides!

Ingredients

Pork:

  • 2 pork chops

  • 3 tablespoons Italian dressing

  • 2 tablespoons of pork fat or avocado oil
  • 2 tablespoons brown sugar
  • 1 teaspoon sea salt

  • Blue cheese

  • Cooked Bacon

Blueberry Reduction

  • 1 cup blueberries

  • 1 cup water

  • 1/2 cup sugar

instructions

  1. Marinate pork chops in Italian dressing overnight or for 20 minutes.

  2. Once marinated, cover evenly with brown sugar and salt.
  3. Heat cast iron with pork fat or avocado oil on high heat.
  4. Once hot, sear both sides of the pork chop for 1 minute and then reduce heat to low and cover.
  5. Remove pork chop once it reaches 145’F and let rest.
  6. For the blueberry reduction, heat a small pot to high heat and add water, blueberries, and sugar.

  7. Bring to a boil and then simmer for 20 minutes, whisk occasionally until thickened.

  8. Serve pork chops with blueberry reduction on top, blue cheese and bacon.

  9. Enjoy!
