Blistered Shishitos with Lemon, Greek Yogo Dip

Did you know 1 in 10 Shishito peppers is hot?? The robust flavor of the shishito peppers & the cool sensation of the dip in this recipe will be a great combo at any table! Shishitos are full of fiber & Vitamin A which have many benefits to our bodies.

Ingredients

  • 12-20 shishito peppers

  • 2 tbsp oil or pork fat @sullivanfarms

  • 2 garlic cloves, diced
  • pinch salt/pepper

Dip:

  • 1/2 cup Greek yogurt

  • Juice from 1/2 of a lemon

  • 1/2 teaspoon Tajin seasoning

  • Pinch of salt

Optional Toppings/additions:

  • Fresh grated parmesan

  • Lemon zest

  • Chopped mint/basil

instructions

  1. Use high heat to warm your skillet up, add oil/fat

  2. Let oil/fat heat up for 1-2 minutes before adding the Shishitos
  3. Toss shishitos in the skillet with salt, pepper and garlic

  4. Let them cook on high heat for 30 seconds without tossing them (this will cause the blistered sides).

  5. Toss shishitos one last time and pull off the heat.
