12-20 shishito peppers
2 tbsp oil or pork fat @sullivanfarms
pinch salt/pepper
Dip:
1/2 cup Greek yogurt
Juice from 1/2 of a lemon
1/2 teaspoon Tajin seasoning
Optional Toppings/additions:
Fresh grated parmesan
Lemon zest
Use high heat to warm your skillet up, add oil/fat
Toss shishitos in the skillet with salt, pepper and garlic
Let them cook on high heat for 30 seconds without tossing them (this will cause the blistered sides).
Toss shishitos one last time and pull off the heat.
In a small bowl, combine dip ingredients and stir until even
