Beautiful Beet Hummus

Beets are beautiful & quite good for you! Full of fiber & folate, these beets will turn up your health for the better.

Ingredients

  • 1 beet

  • 2 cloves roasted garlic

  • 1 1/2 cups rinsed chickpeas (garbanzo beans are the same as chickpeas)

  • 3 tablespoons olive oil

  • 1/4 teaspoon cumin

  • 1/4 teaspoon smoked paprika

  • Pinch salt/pepper

  • 2 ice cubes (helps keep hummus smooth)

Optional toppings/additions:

  • Radishes

  • Cucumbers
  • Dill

  • Pita

instructions

  1. Put all ingredients into a large food processor or Nutribullet
  2. Blend on high for 2-3 minutes or until smooth

  3. Serve hummus with fresh veggies or bread and enjoy!
