Kale Salad

  • bunch kale
  • 1 small onion
  • 1/2 cup apple cider vinegar
  • 2-3 TBSP olive oil
  • 1 TBSP honey or other sweetner
  • 1 cup raisins, cranberries or currents
  • 2 carrots grated


Wash and chop the kale. Chop the onion and add the kale. Bring to boil the vinegar, olive oil and sweetner. Pour over the kale and onion. Stir repeatedly. This wilts the kale. Toast the nuts and add to the kale, stirring. This continues the wilting. Let cool Add the chopped vegetables and dried fruit, and stir. You can use any veggies or fruits with the salad. But the grated carrots and red peppers really go well it!
