Ingredients
  • 1 pound heriloom tomatoes chopped
  • 1 tablespoon balsamic vinegar
  • 1 tablesoon extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
For the herbed yougurt
  • 1 cup Greek yogurt
  • 1/4 cup fresh herbs, such as cilantro, dill, or parsley chopped
  • 1/2 teaspoon freshly ground black pepper
For the assembly
  • 1 tablespoon extra virgin olive oil
  • 1 1/2 cups romaine lettuce shredded

  • 1 1/2 cups romaine lettuce shredded
Instructions
  1. Set a large, heavy skillet over medium-high heat until it is hot. Add oil and swirl to coat skillet. Add lamb mixture and cook, stirring frequently to break up, until browned. Pour off any fat. In a medium bowl, combine the tomatoes, balsamic vinegar, olive oil, salt and pepper. Set aside. In a food processor, blend all the herbed yogurt ingredients until it turns pale green. Scrape into a small bowl. Heat or fry the corn tortillas in a little olive oil. Spread the tortillas with the herbed yogurt and top with the tomatoes and lettuce.
